Meanwhile in the kitchen - The PitaTio!

I go into the kitchen furious yet motivated to blow the lady’s mind with a new twist to my Patio recipe! We have plenty of patio left from our Saturday lunch. Since I was working on Saturday, I am a bit unprepared but thankfully my pantry is fully equipped to handle these situations.


You’ll need:
Leftover Prawn patio that you prepared using this super recipe, https://goo.gl/aZCfpf
Pita bread
1 pack of streaky bacon
1 pack tinned sardines in oil
1 medium onion
1 bunch of coriander

The Preparation: The part where I put on the Toga!

Hummus:
Now, if you don’t have tinned chickpeas, just run to the store and get yourself a pack of ready hummus. If you want to make it from scratch. Take some cooked chickpeas and blitz them in a blender with olive oil, salt, pepper, a bit of paprika or chilli flakes, tahini paste (Try peanut butter or almond butter). Like I said, my pantry is well stocked! Add lemon zest and juice from half a lime to the mix.

Bacon and Tinned sardines:
Lay down the bacon and sardines in a roasting pan. Preheat the grill oven at 200 C for about 10 minutes. Once the oven is ready put it under the grill for about 10-12 minutes. You’ll need to watch this and reduce the heat if you seeing it browning up too fast. You want the bacon to be crispy and the sardines should have a nice charred skin.
 
Warm up the pita breads in the oven using the residual heat after you’ve  taken out the sardines and bacon. Chop up some onions and season with salt, lime and garnish with coriander.

Laying the Smackdown
Spread the hummus on the pita bread and top it up with the leftover Patio. Then a layer of the onion salad, then goes the bacon and then finally the sardines. Lay it all up and layer it up as you like it!

We decided to name this dish Pita per Patio or PitaTio!
