The ideology of fried rice is
simple.. Rice and bunch of other stuff mixed together.. No cooking time, no
measurements, no thickening, no blending, no sous vide, no mise en
place! Just chop chop chop, lot of wok banging, sizzling sounds and boom! Just like
that magic! FRIED RICE!
In our
house Fried rice is the go to meal when I’ve been slagging off all day at
work..errrm I mean slogging off and the Mrs. has a tiring day with the kids..
Like today when the kids were loaded up on all sorts of bloody chocolate eggs
from easter hunts at nursery to play time around the park! It was hectic day
indeed… When I got home, the usual mise en place wasn’t done! So I open the
fridge and get at it…
For my
recipe of fried rice, firstly you’ll need to have leftover rice! I had…
1-2 bowls
of cooked rice
1 cup
peeled prawns (frozen from the bag will do just fine too)
1 tbsp
sesame oil
1 sliced
onion
Finely
sliced ginger and garlic
2-3 dried Sichuan
chillies or any dried chilli will do (remember this is a no fuss meal)
1 cup of broccoli
1 cup cubed
carrots
1-2 tbsp
Soya sauce
1 tsp Hoisin
Sauce
1 tsp Sichuan
chilli oil
1 egg
Start with
popping open a bottle of beer or in my case pouring a nice chilled crisp Gin
Tonic topped with some mint and rosemary.. Sorry mind is wandering away, Fried
rice… focus focus..
So put
that drink aside and heat up the sesame oil in a wok or a deep pan basically.
Add the dried chilles, ginger and garlic. Once you start smelling a bit of a
char add the onions and mix it around. This is the cue for the first bang! Now add
the prawns and let them turn orange (which means they’re cooked). Now add the vegetables
and cook them 2-3 minutes tops. It’s always nice to keep a veg cooked but yet crispy.
You got to work fast now, so add the soya sauce and hoisin and mix it all
around. If need be add a drizzle of water or oil to the wok to avoid it from
sticking to the pan. Bang Bang Bang add the rice in and mix it all around.
Move the
rice on one side and crack an egg in the same pan and let it cook. With the
high heat this is going to cook real quick. Basically scramble the egg and cook
it well and start mixing it in with the rice. And that’s as easy as it sound.
