Waka-mole... Waka what?
Guacamole or wakaˈmole in Spanish; is sometimes
informally referred to as "guac". Originally developed by the Aztecs
in what’s now Mexico or Mehico! This is an avocado based dip that’s been made
famous by the new age, millennial, gluten intolerant, lactose intolerant, oversized
beanie and wayfarer sporting hipster crowd. Also, surprisingly National
Guacamole Day is celebrated on the Mexican Independence Day, i.e., 16th
September.
Now,
unlike most of the people, I didn’t come across avocados during the Hipster Revolution
of 2015. In fact, I came across this super food during my son Zayn’s Super Stinky
Diaper Revolution, i.e., when he moved onto solid foods! So, like any other
parent we googled what we could give our baby to start things off. Other than
the usual carrot, apple, etc. etc. we
came across avocado. If you’re looking for this in India, you might want to
look for Makhanphool. Your local bhaiyaji will not know what an avocado is.
Over
time we started incorporating avo into a lot of our meals. An all-time
favourite at my place is a simple avocado and egg-based breakfast with toast.
So,
you’ll need:
2-3
large avocados
2
fresh green chillies deseeded
Fresh
coriander and mint leaves chiffonade cut
Juice
from 1 lime
Tabasco
sauce
Worcestershire
sauce
Salt
and ground pepper per preference
In
recent years, European medical agencies have defined a condition called ‘Avocado Hand’, which is an injury commonly
attended to by them when humans are trying to prepare avocados. So, if you
haven’t handled this fruit before I’d suggest that you look up some tutorials
before you get an Avocado hand.
Once
you have safely extracted the flesh of the fruit, mash it all up with the dry
and wet ingredients. You’ll need to play around and balance the the amount of salt,
lime juice, Tabasco and Worcestershire sauce. The trick is to keep
tasting.
Once
your guac is ready, fry up some sunny side up eggs and toast. Layer the eggs
and a guac on the toast and enjoy!
