Sticky PiriPiri Lime and Herb spatch with roasted sweet potato chips and toasted ciabatta!
For the spatch:
PiriPiri spice rub
& a wet paste made of
1 whole garlic
3 Kashmiri chillies
1 tbsp dry herbs (rosemary, tarragon)
Juice from 1 big sized lime and a clementine
Salt as per preference.
For the sweet potato:
Coat evenly with olive oil, salt, garlic powder and leftover marinade of the spatch.
Marinade overnight and keep it for thawing an hour prior to cooking. All the stuff goes in the oven at 160° for an hour and 20 mins. Turn the spatch around once during the cooking to cook evenly and get a nice char at the bottom as well!
