Kitchen tales: Tambda Kolhapuri Rassa!
Reshma:
Tambda (red) or Pandhra (white)

narangi (a local Indian brew) while the marinaded chicken rests for an hour.
Heat oil in a pan. Adds 4-5 cloves, 3/4 Black Pepper, 3/4 Cinnamon Sticks, Onion cut lengthwise, Fresh and Dry Coconut. Fries it until the onion becomes light brown.
Thinks how sexy Reshma would look in nav vari sari (a traditional India saree worn by ladies from Maharashtra). Suddenly gets smacked with a Kolhapuri chappal by Reshma as the masala starts to burn a bit. After that he puts all this in a grinder and makes a paste to distract himself.
Now takes oil in a big pan & heats it for further distraction. Add the chicken and fries till its light brown and adds chopped tomatoes. Covers pan with a lid upside down, keep water onto the lid. When water on the lid starts bubbling, add the water into the pan. Close lid and let it simmer for about 10 mins. Now that the chicken is half cooked adds the grinded Kolhapuri Masala. Add 2 tbsp of Ghee. Close the lid & let it cook for around 20-25 minutes. Now switch off the gas, cover lid tightly for 15 mins. Garnish with freshly chopped corriander.
